Strawberry Mug Cake

Description
Strawberry mug cake is a really simple and satisfying little dessert for when you are craving something sweet. It is quick and easy to make. I have shared both air fryer and microwave recipes here.
Ingredients
- 3 tbsp. self-raising flour
- 1.5 tbsp. sugar
- 3 tbsp. almond milk
- 1 tbsp. coconut oil or vegetable oil
- ¼ tsp. vanilla extract
- 2 strawberries diced
Directions
- This recipe is really as easy as it can get. Assemble all the ingredients. Now take an oven safe and microwave safe ceramic mug like the one I have used here.
- Take 3 tbsp. self-raising flour along with 1.5 tbsp. sugar in the mug. No need to use another dish. Pour in 3 tbsp. almond milk, 1 tbsp. vegetable oil, ¼ tsp. vanilla extract and mix well till the batter is smooth.
- Now add in two diced strawberries. That's it. You can add some chunks of chocolate or chocolate chips too if you are in the mood.
- Preheat air fryer to 170C or 340F for three minutes. Place the mug into the air fryer basket and cook for about 12-15 minutes at 170C or 340F till the mug cake is cooked.
- Keep an eye on it during the last few minutes (after 12 minutes). To check if it is done, insert a toothpick in the center. It should come out clean.
- Take out the mug cake. Let it cool for a minute or two before digging in. You can garnish with slivered strawberries and optional whipped cream or ice cream before serving.
- If you are using the microwave, follow the same steps for mixing the batter in a microwave-safe mug. Once ready, place the mug in the center of the microwave and cook on high for 90 seconds. If the cake is not fully cooked, give it another 15 seconds. Cook in instalments of 15 seconds till your strawberry cupcake is done.
- Cool slightly before enjoying. Garnish as needed.
