Red Lentil Protein Waffles

Description
These waffles are for those who want a sweet start to the morning but also know how important it is to begin the day with a bit of protein.
Ingredients
- 2 cups red lentils
- 2 cups old-fashioned rolled oats
- 1 cup whole milk
- 1 cup cottage cheese
- 1/3 cup maple syrup, plus more for serving
- 4 large eggs
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- cooking spray, for cooking
- melted peanut butter, for serving (optional)
Directions
- Add lentils to a large bowl and cover with cold water by 2 inches. Let soak at least 4 hours and up to overnight.
- Preheat oven to 250 F. Strain lentils then add to a blender, along with the rest of the ingredients, and process until you have a thick batter.
- Preheat your waffle maker. When ready, grease with cooking spray then pour in waffle batter. Cook until the waffle is fully set, golden brown and the edges are slightly crispy.
- Transfer finished waffles to a sheet tray fit with a cooling rack and keep warm in the oven until ready to serve. Repeat with the remaining batter.
- Serve with maple syrup and a drizzle of melted peanut butter.
