Red Lentil Protein Waffles

These waffles are for those who want a sweet start to the morning but also know how important it is to begin the day with a bit of protein.

Ingredients
  • 2 cups red lentils
  • 2 cups old-fashioned rolled oats
  • 1 cup whole milk
  • 1 cup cottage cheese
  • 1/3 cup maple syrup, plus more for serving
  • 4 large eggs
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • cooking spray, for cooking
  • melted peanut butter, for serving (optional)
Directions
  1. Add lentils to a large bowl and cover with cold water by 2 inches. Let soak at least 4 hours and up to overnight.
  2. Preheat oven to 250 F. Strain lentils then add to a blender, along with the rest of the ingredients, and process until you have a thick batter.
  3. Preheat your waffle maker. When ready, grease with cooking spray then pour in waffle batter. Cook until the waffle is fully set, golden brown and the edges are slightly crispy.
  4. Transfer finished waffles to a sheet tray fit with a cooling rack and keep warm in the oven until ready to serve. Repeat with the remaining batter.
  5. Serve with maple syrup and a drizzle of melted peanut butter.
