Peppered Cilantro Rice

Description
Light and fluffy rice with fresh cilantro and a peppery kick. A quick, refreshing side perfect for grilled dishes.
Ingredients
- 1 small onion, finely chopped
- 1/2 cup finely chopped sweet red pepper
- 1/2 cup finely chopped sweet yellow pepper
- 2 garlic cloves, minced
- 1 tablespoon olive or canola oil
- 2 cups water
- 1 cup uncooked long grain rice 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons minced fresh cilantro or parsley
Directions
- In a saucepan, saute the onion, peppers and garlic in oil for 2-4 minutes or until crisp-tender. Add the water, rice, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 18-22 minutes or until the rice is tender. Remove from the heat. Add cilantro; fluff with a fork.
