Hearty Rice Salad

Description
A filling rice salad with veggies, beans, or meats tossed in a zesty dressing. Great for lunch or meal prep.
Ingredients
- 2 cups cooked rice
- 1 medium carrot, chopped 1 small zucchini, chopped 1 celery rib, thinly sliced
- 1/2 cup cubed cooked chicken 1/2 cup cubed fully cooked ham 1/2 cup cubed swiss cheese
- 2 hard-cooked eggs, chopped 2 tablespoons mayonnaise
- 1 tablespoon minced fresh parsley 1 tablespoon lemon juice
- 1 tablespoon olive or vegetable oil 1/2 teaspoon salt
- 1/8 teaspoon pepper
Directions
- In a large bowl, combine all ingredients. Cover and refrigerate for 4 hours or overnight.
