Air fryer Shrimp Fajitas

These air fryer shrimp fajitas are perfect when you are looking to spruce up something tasty, quick, and healthy.

Ingredients
  • 1 lb. shrimp or 500 gm.
  • ½ pepper each yellow, red and green bell pepper
  • 1 onion
  • 2 tbsp. olive oil
  • 2 tbsp. fajita seasoning
  • 1 tbsp. lemon juice
  • 4 tortillas
  • ½ avocado
  • 2 tbsp. guacamole
Directions
  1. Take 1 lb. Or about 500 gm. Peeled and deveined shrimp or prawn.
  2. I did not leave the tail on, but you can for aesthetics or convenience.
  3. Take ½ each red, yellow and green bell pepper or capsicum.
  4. You can take more too if you want to have more veggies.
  5. Slice them into long strips. Remove the veins and seeds.
  6. Take one large onion and slice into thick strips.
  7. Assemble the spices. In this case I am using fajita seasoning along with some added pepper.
  8. In a bowl, mix sliced peppers and onions with half the fajita seasoning, pepper and half olive oil.
  9. You can use 1 tbsp. lemon juice as well.
  10. Mix well.
  11. Repeat the same with shrimp too.
  12. Air fryer Instructions
  13. Preheat air fryer at 360F or 180C for 5 minutes.
  14. Lay the seasoned veggies in one layer in the air fryer basket.
  15. Air fry at 360F or 180C for about 4 minutes.
  16. Now move the veggies to one side and add the seasoned shrimp to the air fryer basket.
  17. Make sure there is no overlap.
  18. Shrimp is added later as it cooks faster than the veggies.
  19. We don’t want to overcook the shrimp.
  20. Air fry at 360F or 180C for about 5-6 minutes till the shrimp is nicely cooked.
  21. This time may vary a bit depending upon the size of your shrimp.
