Turkey Tetrazzini
In my mind, this is the best way to use leftover Thanksgiving turkey. My Grammy used to make this for my dad—sadly, she never gave up the recipe, but I have done my best to recreate it, based on a Giada de Laurentiis classic chicken tetrazzini recipe. This is nontraditional in the sense there are no mushrooms, because my dad won't touch them! Enjoy!

Tuscan Turkey Roulade
I learned this recipe while on my honeymoon in Tuscany. My husband and I signed up for a cooking class that was held at a quiet and beautiful B&B called Fagiolari. Under the tutelage of Giulietta and Stefania, we made this wonderful turkey roulade. The recipe is very simple and the only change I made was to double the amount of onions because they become a lovely 'sauce' when braised in white wine. I also added a variation using chicken breasts.
Banh Mì Style Turkey Sandwich
This recipe won me second prize in my local newspaper's Thanksgiving leftover sandwich contest. It is a great sandwich, full of flavor and texture. The amounts given here will serve 2 with leftover pickled vegetables. So it can be expanded to serve a larger number. I just took what I know as a banh-mi sandwich and substituted turkey and bacon for the pork and pate. I used parsley and celery leaves instead of cilantro because that is what I had on hand. I like the way the minced ginger clings to the carrot and cucumber when you remove the vegetables from the marinade; it adds a nice spice to the crunchy vegetables. It was a lighter, fresher tasting departure from the usual post-Thanksgiving sandwich. Enjoy!

Spiced Lebanese Pine Nuts and Raisins Rice with Turkey
The original recipe was given to me by a Lebanese friend, she serves it many times for dinner parties and it goes very well with roasted meats and lamb. I normally make it following her recipe and it's extremely easy. It's also brilliant the next day, at room temperature as a salad but it warms up very easily. So I thought it could do a wonderful warm salad adding leftover shredded turkey or chicken. So this is my Lebanese take on Christmas Turkey leftovers. This recipe is loosely based on a friend's family recipe for something called Green Chicken. My version really ramps up the roasted chilis and tomatillos to impart a smokier flavor, and uses turkey since there's always so much leftover after Thanksgiving and Christmas! Don't be too alarmed by the number of peppers in the recipe - most of them are de-seeded, so the final dish is warm without being overwhelmingly spicy. In our house, this is frequently served over tortilla chips and topped with a dollop of sour cream.
