Banana & Butternut Buttermilk Cake
Is it a cake, bread, loaf? I am not sure where one crosses the boundary from bread to cake....So often we refer to "Banana Bread." It is a cake in my book. A buttery, sweet satisfying, crumbly, sugar filled treat. In this recipe I combine many seasonal flavors. The spices combined with the butternut squash give a nice holiday twist to a traditional banana bread....or cake!
Caramelised Banana Oatmeal
Ever since returning from Tahiti, I've had tropical fruits on the brain. The mornings there always included a platter of passionfruit, papaya, wedges of fresh coconut, green grapefruit and small, sweet bananas. On a rainy morning like today I was channeling Polynesia with this oatmeal. Creamy with coconut milk and fragrant with sticky Tahitian vanilla beans, I topped it with some lightly sautéed bananas that transformed a healthy, hearty breakfast dish into something very closely resembling dessert. The oats to liquid ratio is a personal preference. The proportions I give lean toward the milky rather than the porridgy side.
Vegan Banana Chocolate Muffins
These muffins taste just as good as ones with dairy and eggs, and they maintain their moistness and texture through use of bananas and a bit of applesauce.

Banana Gelato
I had heard about putting a frozen banana in a food processor to make it turn into ice cream so I decided to do some experimenting. Once I came up with the perfect recipe, I knew this was the only way I would ever eat bananas ever again :o This recipe is guilt-free gelato. What more could you ask from the universe? Even if your not a fan of bananas, I'd give it a go because if you add the cocoa powder and maybe a few toppings, it doesn't have an overpowering banana flavor.
Spiced Banana Yogurt Muffins
Banana bread is the first recipe I ever jotted down, dutifully copying one from The Junior League Cookbook that somehow found its way to my mother's kitchen. I still always buy bananas with the intent of baking some of them into something, but they have a habit of disappearing on their own before I get around to it. This recipe is based on Smitten Kitchen's "jacked-up banana bread," but assumes you're staring into your fridge and coming up a bit empty on the banana front. Don't worry, no one will know.
Raw Almond Butter Banana Cream Pie
I love banana cream pie, especially during the summer time. There is nothing better than a cool dessert on a hot summer day. I am also pretty obsessed with almond butter and was looking for a way to create a healthier dessert. BAM! This is the best of both worlds, a creamy, nutty almond butter combined with bananas and maple syrup for a sweet filling. It all gets poured over an almond date crust that makes for an absolutely to die for dessert!

The Anchovy Elvis Anchovy Almond Butter Banana and Honey Sandwich
Elvis Presley made great music and had amazing taste in sandwiches. His fondness for peanut butter, banana, and bacon sandwiches is well established. Linda's significant other Joe is allergic to peanuts, so making homemade nut butters is a weekly routine in our house. This is our take on the classic Elvis sandwich, replacing the bacon with anchovies and peanuts with almonds. The anchovies provide great saltiness and flavor to the almond butter. Needless to say, this is one of our favorite lunchtime brown bag sandwiches.
Vegan Pumpkin Banana Pancakes
Want to know the secret to frying vegan pancakes? Coconut oil. Lots. And a REALLY GOOD nonstick pan at the perfect temperature. If you do not have these things you should probably just make waffles. Otherwise you may be in a pickle. I tend make these pancakes when I'm feeling confused, frustrated, or upset. For some reason, they make me feel stronger. I know I won't find all the solutions to my problems in a stack of pancakes, but sometimes determination pays off. And if one can feel vindicated by a tower of fried cakes, life is really not bad. Not bad at all. Recipe adapted from The First Mess and For Love and Lemons.
