Samosas with Loquat Onion Chutney
Samosas were probably the first Indian food I fell in love with. How could you not? Perfectly fried triangles of curried potato and peas in a crispy shell are the ideal snack, almost any time. In college I studied abroad in India and fell even deeper for Indian flavors, although what we in America think of as Indian food is a little different. I’ve been making samosas ever since I’ve had my own kitchen, over 10 years, and they are always crowd pleasers.

Southern Birria Tacos
This dish was inspired by Wapa Taco in San Antonio, Tx. I lived there a few months for my husband's job and fell in love& this viral taco the birria its basically a nice roast beef slow roasted and you put into a corn tortilla with cheese and onion and fry in the sauce the beef cooked in..then dip the taco in the yummy goodness. Ok ok but the spice was a little much so I toned it down and made it a little my own. So here is my twist on a birria taco.
Burek Assyrian Egg Rolls
For more photos and recipe notes (including a vegetarian version), visit Cardamom and Tea. Whenever someone immigrates, gets engaged or married, or visits from out of town, my Nana celebrates the occasion by frying up a big plate of burek, which she usually serves unceremoniously on a plate lined with paper towels, since everyone is always lurking around the stove waiting for her to lift them out of the deep fryer. Burek doesn't need to be served on fine china, dressed up with a fancy presentation, or served with a clever assortment of dipping sauces in order to be celebratory. It's just inherently so! And if you make these for your next party, they will be the first thing to go (seriously, even if you triple the recipe), so make sure you save yourself a few in the back of the refrigerator, because they're also fabulous left over (it's a very cold-leftover-pizza experience).
